Queensland Parliamentary Catering Services is seeking a dedicated and skilled Senior Sous Chef to join our dynamic culinary team. Working within the heritage-listed Parliament House precinct, you'll play a key role in delivering high‑quality dining experiences, from à la carte service to high‑profile functions and events. This is an exciting opportunity to showcase your culinary expertise in a unique and rewarding environment.
Key Objectives
- Deliver high‑quality food preparation, cooking, and presentation across multiple dining and event settings.
- Assist the Executive Chef with menu planning, ordering, stock control, and operational oversight.
- Support efficient kitchen operations through supervision, rostering, and team coordination.
Your Role
- Supervise and assist in all aspects of food preparation, cooking, and service delivery.
- Work closely with the Executive Chef on menu development and costing, ordering, receiving, storage, and food presentation standards.
- Coordinate daily activities for kitchen staff, including Casual Chefs, Apprentice Chefs, and Kitchen Assistants.
- Ensure appropriate roster coverage across all service periods and functions.
- Manage inventory control, monitor stock levels, and contribute to waste‑reduction initiatives.
- Support the training, development, and supervision of Apprentice Chefs, ensuring they receive guidance and support.
- Assist in monitoring hygiene and safety practices, maintaining compliance with HACCP and food safety programs.
- Contribute to cost‑control measures to meet financial targets set by executive management.
What We're Looking For
- Cert III as a Chef (mandatory).
- Strong communication and interpersonal skills.
- Demonstrated knowledge of modern and traditional cooking techniques.
- Solid understanding of hygiene and safety standards, including HACCP requirements.
- Ability to organise and prepare for functions, including large‑scale catering.
- Confidence using computer systems (email, internet, word processing, spreadsheets) or ability to learn quickly.
- Ability to work with limited supervision while meeting deadlines and maintaining high standards.
